So, its that time of the year, where you just want to curl up with a bowl of soup and a blanket. So I made my first ever soup last night. Campbells is so convenient, but making soup yourself is just so much better. It was delicious.
I worked off a recipe but ended up changing it, like I always do. I can never stick to a recipe so here's what I remember, I call it Cheesy Chicken Soup with Potato:
1 cup or so of carrots grated, (I used a potato peeler and got them really thin)
1 stalk of celery cut to bite size peices
1 cup of onion chopped (I didn't have any on had so I used the seasoning - still good)
2 potatoes diced (I like my pieces small)
4/5 tbs butter
1/4 cup of flour
2 cups of milk
1 can of chicken broth/stock
worcestershire sauce - I don't measure just add some
1 large can of canned chicken
1-2 cups of cheddar cheese (the cheesier the better)
ok so here's what you do:
In a medium pot cook the veggies in the butter for 10 minutes or so, until they are soft (but not brown). Add the flour and mix in. Slowly add the milk, chicken broth, worcestershire sauce. Stir until thick and bubbly (probably 10 minutes), then add the canned chicken and cheddar cheese (I mixed these before hand). The cheese will also make the soup thicker so don't worry if it doesn't thicken up on its own. You can add more flour if you need to.
I also topped the soup with the cheese - can you tell I love cheese. I served with crescent rolls.
